Creamy, rich, and packed with bold tomato flavor, this Marry Me Tofu features golden pan-seared tofu simmered in a velvety sun dried tomato cream sauce. It is comforting, satisfying, and perfect for a cozy weeknight dinner.


Ingredients

  • 14 ounces extra firm tofu, pressed and cut into cubes
  • 2 tablespoons olive oil
  • 4 cloves garlic, minced
  • 1/3 cup sun dried tomatoes, chopped
  • 2 tablespoons tomato paste
  • 1 cup vegetable broth
  • 3/4 cup coconut cream
  • 1 teaspoon Italian seasoning
  • 1/4 teaspoon red pepper flakes (optional)
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 tablespoons fresh basil, chopped

Instructions

  1. Heat a large skillet over medium heat and add 1 tablespoon of olive oil.
  2. Toss the pressed tofu cubes with salt and black pepper until evenly coated.
  3. Add the tofu to the skillet in a single layer and cook for 4 to 5 minutes per side until golden brown. Remove and set aside.
  4. Add the remaining 1 tablespoon olive oil to the same skillet. Sauté the minced garlic for about 30 seconds until fragrant.
  5. Stir in the tomato paste and chopped sun dried tomatoes. Cook for 1 minute to deepen the flavor.
  6. Pour in the vegetable broth and coconut cream. Add Italian seasoning and red pepper flakes. Stir well and bring to a gentle simmer for 5 to 7 minutes until slightly thickened.
  7. Return the tofu to the skillet and simmer for another 5 minutes, allowing it to absorb the sauce.
  8. Sprinkle with fresh basil before serving and enjoy warm.
