Ingredients
- 14 ounces extra firm tofu, pressed and cut into cubes
- 2 tablespoons olive oil
- 4 cloves garlic, minced
- 1/3 cup sun dried tomatoes, chopped
- 2 tablespoons tomato paste
- 1 cup vegetable broth
- 3/4 cup coconut cream
- 1 teaspoon Italian seasoning
- 1/4 teaspoon red pepper flakes (optional)
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 2 tablespoons fresh basil, chopped
Instructions
- Heat a large skillet over medium heat and add 1 tablespoon of olive oil.
- Toss the pressed tofu cubes with salt and black pepper until evenly coated.
- Add the tofu to the skillet in a single layer and cook for 4 to 5 minutes per side until golden brown. Remove and set aside.
- Add the remaining 1 tablespoon olive oil to the same skillet. Sauté the minced garlic for about 30 seconds until fragrant.
- Stir in the tomato paste and chopped sun dried tomatoes. Cook for 1 minute to deepen the flavor.
- Pour in the vegetable broth and coconut cream. Add Italian seasoning and red pepper flakes. Stir well and bring to a gentle simmer for 5 to 7 minutes until slightly thickened.
- Return the tofu to the skillet and simmer for another 5 minutes, allowing it to absorb the sauce.
- Sprinkle with fresh basil before serving and enjoy warm.
