Description

  • 1/2 cup unsalted butter, melted (115 grams)
  • 2 cups ripe mangoes, pureed (about 3 large mangoes)
  • 8 ounces cream cheese, softened (225 grams)
  • 1 cup heavy cream (240 milliliters)
  • 3/4 cup powdered sugar (90 grams)
  • 1 tablespoon fresh lemon juice
  • 1 tablespoon unflavored gelatin, dissolved in 3 tablespoons warm water
  • 1 fresh mango, sliced for topping
  • 1/2 cup whipped cream for decoration

Instructions

  1. Preheat oven to 350°F (175°C) if baking the crust. Mix digestive biscuit crumbs and melted butter until evenly combined.
  2. Press the crumb mixture firmly into a 9 inch pie pan, covering the base and sides evenly. Bake for 8 to 10 minutes if desired, then cool completely.
  3. In a mixing bowl, beat the softened cream cheese and powdered sugar until smooth and creamy.
  4. Add the mango puree and fresh lemon juice, mixing until fully incorporated.
  5. Stir in the dissolved gelatin and mix well.
  6. In a separate bowl, whip the heavy cream to soft peaks, then gently fold it into the mango mixture.
  7. Pour the filling into the cooled crust and smooth the top with a spatula.
  8. Refrigerate for at least 4 hours until fully set.
  9. Decorate with whipped cream and fresh mango slices before serving. Slice and serve chilled.
