- 2 cups ripe mangoes, pureed (about 3 large mangoes)
- 8 ounces cream cheese, softened (225 grams)
- 1 cup heavy cream (240 milliliters)
- 3/4 cup powdered sugar (90 grams)
- 1 tablespoon fresh lemon juice
- 1 tablespoon unflavored gelatin, dissolved in 3 tablespoons warm water
- 1 fresh mango, sliced for topping
- 1/2 cup whipped cream for decoration
Instructions
- Preheat oven to 350°F (175°C) if baking the crust. Mix digestive biscuit crumbs and melted butter until evenly combined.
- Press the crumb mixture firmly into a 9 inch pie pan, covering the base and sides evenly. Bake for 8 to 10 minutes if desired, then cool completely.
- In a mixing bowl, beat the softened cream cheese and powdered sugar until smooth and creamy.
- Add the mango puree and fresh lemon juice, mixing until fully incorporated.
- Stir in the dissolved gelatin and mix well.
- In a separate bowl, whip the heavy cream to soft peaks, then gently fold it into the mango mixture.
- Pour the filling into the cooled crust and smooth the top with a spatula.
- Refrigerate for at least 4 hours until fully set.
- Decorate with whipped cream and fresh mango slices before serving. Slice and serve chilled.
