- 1 cup whipping cream
- 1/4 cup powdered sugar
- 1 cup cherry pie filling
- 6 ounces dark chocolate
- 1/2 cup heavy cream
- Fresh cherries for garnish
Instructions
- Preheat oven to 350°F (175°C) and line a 10×15-inch baking sheet with parchment paper.
- Whisk eggs and sugar until fluffy and pale. Add vanilla, then fold in flour, cocoa, and salt until combined.
- Pour batter onto prepared pan and spread evenly. Bake for 12–15 minutes until sponge springs back when touched.
- Invert cake onto a cocoa-dusted towel, peel off parchment, and roll it up while warm. Let cool completely.
- Whip cream with powdered sugar until stiff. Gently fold in cherry filling.
- Unroll cooled cake, spread filling evenly, and roll again tightly.
- Heat heavy cream, pour over chopped dark chocolate, and stir until smooth. Pour glaze over roll and decorate with fresh cherries.
- Chill before slicing and serve cold.
