  • 4 large eggs
  • 3/4 cup granulated sugar

  • 1 cup whipping cream
  • 1/4 cup powdered sugar
  • 1 cup cherry pie filling
  • 6 ounces dark chocolate
  • 1/2 cup heavy cream
  • Fresh cherries for garnish

Instructions

  1. Preheat oven to 350°F (175°C) and line a 10×15-inch baking sheet with parchment paper.
  2. Whisk eggs and sugar until fluffy and pale. Add vanilla, then fold in flour, cocoa, and salt until combined.
  3. Pour batter onto prepared pan and spread evenly. Bake for 12–15 minutes until sponge springs back when touched.
  4. Invert cake onto a cocoa-dusted towel, peel off parchment, and roll it up while warm. Let cool completely.
  5. Whip cream with powdered sugar until stiff. Gently fold in cherry filling.
  6. Unroll cooled cake, spread filling evenly, and roll again tightly.
  7. Heat heavy cream, pour over chopped dark chocolate, and stir until smooth. Pour glaze over roll and decorate with fresh cherries.
  8. Chill before slicing and serve cold.
