  • 2 cups shredded cheddar cheese
  • 6 slices cooked bacon, crumbled
  • 2 green onions, sliced

Instructions

  1. Preheat oven: Heat oven to 375°F (190°C). Grease a 9×13-inch baking dish.
  2. Mix meatloaf: In a large bowl, combine ground beef, breadcrumbs, milk, egg, onion, garlic, ketchup, Worcestershire sauce, salt, and pepper. Mix until just combined—don’t overmix.
  3. Bake meatloaf layer: Spread meat mixture evenly into prepared dish and bake for 25–30 minutes, until cooked through.
  4. Prepare potato layer: While meatloaf bakes, mix mashed potatoes with sour cream, garlic powder, salt, and pepper until creamy.
  5. Assemble casserole: Spread mashed potatoes evenly over the cooked meatloaf. Sprinkle shredded cheddar on top.
  6. Final bake: Return to oven for 10–15 minutes, until cheese is melted and bubbly.
  7. Add toppings: Sprinkle crumbled bacon and green onions over the top before serving.
