- 2 pounds russet potatoes, peeled and chopped
- 6 tablespoons salted butter, softened
- 1 cup sour cream
- 1/2 cup milk, warmed
- 1 1/2 cups shredded cheddar cheese
- 1 cup caramelized onions
- 1/4 cup green onions, finely chopped
- Salt and pepper, to taste
Instructions
- Preheat your oven to 375°F if you plan to bake the dish.
- Boil the chopped potatoes in salted water for 15-20 minutes until fork-tender. Drain well and return to the pot.
- Mash the hot potatoes with butter, sour cream, and warm milk until smooth.
- Fold in half the cheddar cheese and season with salt and pepper.
- Transfer the mixture to a greased baking dish and top with remaining cheese and caramelized onions.
- Bake for 10-15 minutes until the cheese is melted and bubbly. Broil for 2 minutes for a golden top, if desired.
- Sprinkle with green onions and serve warm.
Notes
- Use a mix of russet and Yukon Gold for an even richer texture.
- Warming the milk and butter helps them blend better into the mash.
- Don’t overmix the potatoes to avoid a gluey texture.
