A soft and moist lemon pistachio loaf bursting with fresh citrus flavor and crunchy pistachios, finished with a bright lemon glaze that melts into every slice.

- 1 and 1 half cups (190 grams) all purpose flour
- 1 and 1 half teaspoons baking powder
- 1 quarter teaspoon salt
- 1 half cup (113 grams) unsalted butter, softened
- 3 quarters cup (150 grams) granulated sugar
- 2 large eggs, room temperature
- 1 half cup (120 grams) plain yogurt
- 2 tablespoons fresh lemon zest
- 2 tablespoons fresh lemon juice
- 1 teaspoon vanilla extract
- 1 half cup (60 grams) shelled pistachios, finely chopped
- 1 cup (120 grams) powdered sugar
- 2 to 3 tablespoons fresh lemon juice for glaze
Instructions
- Preheat oven to 350 degrees Fahrenheit (175 degrees Celsius). Grease and line a 9 by 5 inch loaf pan with parchment paper.
- In a bowl, whisk together flour, baking powder, and salt.
- In a separate bowl, cream softened butter and sugar until light and fluffy. Add eggs one at a time, mixing well after each addition.
- Mix in yogurt, lemon zest, lemon juice, and vanilla extract until combined.
- Gradually add the dry ingredients into the wet ingredients and stir gently until just combined. Fold in chopped pistachios.
- Pour batter into prepared loaf pan and smooth the top evenly.
- Bake for 50 to 55 minutes, or until a toothpick inserted in the center comes out clean.
- Cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
- Whisk powdered sugar with 2 to 3 tablespoons fresh lemon juice until smooth. Drizzle over the cooled loaf and let set before slicing.
Notes
- Use fresh lemon zest and juice for the brightest flavor.
- Do not overmix the batter once the flour is added to keep the loaf tender.
- Allow the loaf to cool completely before adding the glaze so it sets properly.
