- 2 slices sourdough bread
- 3 ounces cooked leftover lamb, shredded or thinly sliced
- 2 slices cheddar cheese
- 1 slice mozzarella cheese
- 1 tablespoon butter, softened
- 1 teaspoon Dijon mustard
Instructions
- Heat a nonstick skillet over medium heat until evenly warm.
- Spread Dijon mustard on the inside of one slice of bread.
- Butter the outer sides of both bread slices evenly.
- Place cheddar cheese on the mustard side, add the lamb evenly, then top with mozzarella cheese.
- Close the sandwich with the second slice of bread, buttered side facing out.
- Place the sandwich in the skillet and cook until the bottom is golden brown.
- Flip carefully, cover briefly, and cook until the second side is golden and the cheese is fully melted.
- Remove from heat, let rest briefly, slice, and serve warm.
Notes
- Cook over medium heat to prevent burning while the cheese melts.
- Covering the pan helps the cheese melt evenly.
- Let the sandwich rest for one minute before slicing for clean layers.
