Description

Khachapuri is a traditional Georgian cheese bread, shaped like a boat and filled with a gooey mix of cheeses and a golden egg yolk in the center. It’s warm, rich, and perfect for sharing.


Ingredients

  • 2½ cups all-purpose flour
  • ¾ cup warm water
  • 2¼ teaspoons active dry yeast
  • 1 teaspoon sugar
  • 1 teaspoon salt
  • 2 tablespoons olive oil
  • 1 cup shredded mozzarella cheese
  • 1 cup crumbled feta cheese
  • 2 large eggs
  • 2 tablespoons butter

Instructions

  1. Preheat your oven to 450°F (230°C) and place a baking sheet inside to heat.
  2. In a bowl, combine warm water, sugar, and yeast. Let it sit for 10 minutes until foamy. Add flour, salt, olive oil, and one egg. Mix into a dough and knead for 5–7 minutes until smooth.
  3. On a floured parchment sheet, roll dough into a 12×6 inch oval.
  4. Mix mozzarella and feta, then pile into the center of the dough. Roll the edges inward and pinch the ends to form a boat shape.
  5. Transfer to the hot baking sheet and bake for 14–16 minutes until golden and bubbling.
  6. Crack an egg into the center and bake for another 3 minutes until the white is set.
  7. Brush crust with butter, serve immediately, and enjoy by tearing off crust and dipping.

Notes

  • Let dough rest to make shaping easier.
  • Use parchment paper for easy transfer and cleanup.
  • Brush crust with butter right after baking for shine.
