Description

Crispy potato rounds loaded with melty cheddar cheese, tangy jalapeños, creamy sour cream, and fresh green onions — these Irish Nachos are the ultimate comfort food-meets-pub snack.


Ingredients

  • 4 medium Russet Potatoes, thinly sliced
  • 2 cups Cheddar Cheese, freshly grated
  • 1/2 cup Sour Cream
  • 3 Green Onions, thinly sliced
  • 1/4 cup Pickled Jalapeños
  • 2 tablespoons Olive Oil
  • Salt and Black Pepper to taste

Instructions

  1. Preheat oven to 425°F and place baking sheet inside to heat up.
  2. Toss sliced potatoes with olive oil, salt, and pepper in a large bowl.
  3. Line the hot baking sheet with parchment paper and arrange potatoes in a single layer.
  4. Roast for 20–25 minutes, flipping halfway through for even crispness.
  5. Top roasted potatoes with grated cheddar and return to oven for 5 minutes, then broil 1–2 minutes until bubbly.
  6. Remove from oven and top immediately with sour cream, jalapeños, and green onions.
  7. Serve warm, directly from tray or on a platter.
