- 4 medium Russet Potatoes, thinly sliced
- 2 cups Cheddar Cheese, freshly grated
- 1/2 cup Sour Cream
- 3 Green Onions, thinly sliced
- 1/4 cup Pickled Jalapeños
- 2 tablespoons Olive Oil
- Salt and Black Pepper to taste
Instructions
- Preheat oven to 425°F and place baking sheet inside to heat up.
- Toss sliced potatoes with olive oil, salt, and pepper in a large bowl.
- Line the hot baking sheet with parchment paper and arrange potatoes in a single layer.
- Roast for 20–25 minutes, flipping halfway through for even crispness.
- Top roasted potatoes with grated cheddar and return to oven for 5 minutes, then broil 1–2 minutes until bubbly.
- Remove from oven and top immediately with sour cream, jalapeños, and green onions.
- Serve warm, directly from tray or on a platter.
