Creamy and comforting Indian Butter Chickpeas simmered in a rich tomato coconut sauce with warm spices, finished with butter and cream for a velvety texture. Perfect over rice or with naan for a cozy, flavor-packed meal.
Ingredients
- 1 tablespoon olive oil
- 2 tablespoons unsalted butter
- 1 medium yellow onion, finely chopped
- 3 cloves garlic, minced
- 1 tablespoon fresh ginger, freshly grated
- 1 tablespoon garam masala
- 1 teaspoon ground cumin
- 1 teaspoon ground coriander
- 1 teaspoon paprika
- 1 teaspoon salt, or to taste
- 1 can (15 ounces) tomato sauce
- 1 cup full fat coconut milk
- 2 cans (15 ounces each) chickpeas, drained and rinsed
- 1/4 cup heavy cream
- 2 tablespoons fresh cilantro, chopped
Instructions
- Heat a large skillet over medium heat for about 1 minute.
- Add olive oil and butter. Once melted, sauté the chopped onion until soft and translucent, about 5 minutes.
- Stir in the minced garlic and grated ginger. Cook for 1 minute until fragrant.
- Add garam masala, ground cumin, ground coriander, paprika, and salt. Stir continuously for about 30 seconds to toast the spices.
- Pour in the tomato sauce and coconut milk. Stir until smooth and fully combined.
- Add the drained chickpeas and mix well to coat in the sauce.
- Bring to a gentle simmer and cook uncovered for 20 to 25 minutes, stirring occasionally, until the sauce thickens.
- Stir in the heavy cream and adjust seasoning if needed.
- Remove from heat and garnish with fresh chopped cilantro before serving.
Notes
- Simmer uncovered for a thicker sauce, or add a splash of water if it becomes too thick.
- For extra heat, add a pinch of chili flakes while simmering.
- This dish tastes even better the next day as the flavors deepen.
- Serve over basmati rice or with warm naan for best results.
