Description

Ingredients

  • 1 pound ground beef (80/20 blend)
  • 4 brioche or potato buns
  • 4 slices American cheese
  • 4 iceberg lettuce leaves
  • 1 large tomato, sliced
  • 1 medium onion, sliced thin
  • 2 tablespoons butter
  • 1/2 cup mayonnaise
  • 2 tablespoons ketchup
  • 1 tablespoon yellow mustard
  • 2 tablespoons pickle relish
  • 1 teaspoon sugar
  • 1 teaspoon white vinegar
  • Salt and black pepper to taste

Instructions

  1. Preheat a cast iron skillet or griddle over medium-high heat until very hot.
  2. In a bowl, combine mayonnaise, ketchup, mustard, pickle relish, sugar, vinegar, salt, and pepper. Chill sauce in the fridge.
  3. Lightly butter buns and toast them in the skillet until golden. Set aside.
  4. Form beef into 4 balls, flatten into thin patties, and season with salt and pepper.
  5. Cook patties in the hot skillet, smash down with a spatula, and sear for 2 minutes per side. Add cheese on top during the last minute.
  6. Spread sauce on each bun, layer lettuce, tomato, onion, patty, and top with the other bun half.
  7. Serve warm, wrapped in parchment or plated.

Notes

  • Chill the sauce at least 20 minutes for best flavor and texture.
  • Toast buns for added richness and to prevent sogginess.
  • Use freshly ground beef for juicier patties.
