Description

  • 1 large egg
  • 1 tablespoon soy sauce
  • 2 tablespoons olive oil (for cooking)
  • 4 burger buns, toasted
  • 4 lettuce leaves
  • 4 tomato slices
  • 4 tablespoons spicy mayo (or to taste)

Instructions

  1. In a mixing bowl, combine 1 pound ground chicken, 1 teaspoon red chili flakes, 1 finely chopped fresh red chili, 2 minced garlic cloves, 2 sliced green onions, 1/2 cup breadcrumbs, 1 large egg, and 1 tablespoon soy sauce. Mix gently until just combined, do not overwork.
  2. Form the mixture into 4 equal patties, slightly thicker in the center to promote even cooking. Chill patties in the refrigerator for 10 minutes to firm up.
  3. Heat a grill pan or skillet over medium-high heat and add 2 tablespoons olive oil to coat the surface.
  4. Place the patties on the hot pan and cook for 5 to 6 minutes per side, until golden brown and the internal temperature reaches 165°F (74°C).
  5. While patties cook, lightly toast 4 burger buns. Spread about 1 tablespoon spicy mayo on each bun base.
  6. Assemble each burger by layering a lettuce leaf and a tomato slice on the mayo-spread bun base, add the hot chicken patty, then crown with the bun top.
