- 1/2 tsp chili powder

- 1 cup corn kernels (fresh, frozen, or canned)
- 1/2 cup cherry tomatoes, diced
- 1/4 cup red onion, finely chopped
- 1/4 cup cilantro, chopped
- 1 jalapeño, seeded and diced (optional)
- 1 tbsp olive oil
Instructions
- In a medium bowl, combine shredded chicken, honey, lime juice, chili powder, salt, and pepper. Mix well and set aside.
- In a separate bowl, prepare the corn salsa by combining corn, tomatoes, red onion, cilantro, jalapeño (if using), olive oil, and a squeeze of lime juice. Season with salt to taste and mix.
- Cut avocados in half, remove pits, and gently scoop out a bit of the flesh to make room for filling (optional: dice the scooped avocado and mix it into the chicken).
- Fill each avocado half with the honey lime chicken mixture.
- Spoon the corn salsa over the top of the chicken in each avocado.
- Serve immediately, garnished with extra cilantro or lime wedges if desired.
