  • 1 1/2 cups cooked shredded chicken (grilled or rotisserie)
  • 2 tbsp honey
  • 1 tbsp lime juice (plus more for drizzling)
  • 1/2 tsp chili powder
  • Salt and pepper, to taste
  • 1 cup corn kernels (fresh, frozen, or canned)
  • 1/2 cup cherry tomatoes, diced
  • 1/4 cup red onion, finely chopped
  • 1/4 cup cilantro, chopped
  • 1 jalapeño, seeded and diced (optional)
  • 1 tbsp olive oil

Instructions

  1. In a medium bowl, combine shredded chicken, honey, lime juice, chili powder, salt, and pepper. Mix well and set aside.
  2. In a separate bowl, prepare the corn salsa by combining corn, tomatoes, red onion, cilantro, jalapeño (if using), olive oil, and a squeeze of lime juice. Season with salt to taste and mix.
  3. Cut avocados in half, remove pits, and gently scoop out a bit of the flesh to make room for filling (optional: dice the scooped avocado and mix it into the chicken).
  4. Fill each avocado half with the honey lime chicken mixture.
  5. Spoon the corn salsa over the top of the chicken in each avocado.
  6. Serve immediately, garnished with extra cilantro or lime wedges if desired.
