Ingredients
Scale
- 1 medium butternut squash (about 2 pounds), peeled and cubed
- 2 tablespoons olive oil
- 3 tablespoons unsalted butter
- 2 tablespoons honey
- 1/2 teaspoon cinnamon
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1 teaspoon chopped fresh thyme (optional)
Instructions
- Preheat your oven to 425°F (220°C). Line a baking sheet with parchment paper or foil.
- In a large bowl, toss the cubed butternut squash with olive oil, salt, pepper, and cinnamon.
- Spread the squash in a single layer on the baking sheet, ensuring the pieces are not overcrowded.
- Roast for 25 to 30 minutes, flipping halfway through, until the squash is tender and caramelized.
- While the squash roasts, melt the butter in a small saucepan over low heat. Stir in the honey and a pinch of salt.
- Drizzle the honey butter over the hot squash and gently toss to coat. Add fresh thyme if desired.
- Serve warm and enjoy.
Notes
- Use pre-cut squash for faster prep.
- Don’t add glaze too early to avoid burning the sugars.
- Sprinkle flaky salt after glazing for enhanced flavor.
