Ingredients

Scale
  • 1 large butternut squash (2.5 to 3 pounds), peeled and cubed
  • 3 tablespoons unsalted butter, melted
  • 2 tablespoons honey
  • 1 tablespoon olive oil
  • 1/2 teaspoon salt
  • 1/4 teaspoon ground black pepper
  • 1 teaspoon fresh thyme leaves (for garnish)

Instructions

  1. Preheat the oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. In a large bowl, toss the butternut squash cubes with melted butter, honey, olive oil, salt, and pepper until fully coated.
  3. Spread the squash in a single layer on the baking sheet, making sure not to overcrowd.
  4. Roast for 25 to 30 minutes, flipping halfway through, until the squash is tender and caramelized.
