Description

A crispy tortilla layered with seasoned beef, refried beans, melted cheese, tangy sauce, and fresh toppings, this homemade Mexican pizza is a fun Tex-Mex fusion that’s quick, customizable, and crowd-pleasing.


Ingredients

  • 1 pound ground beef, seasoned with taco seasoning
  • 1 cup refried beans
  • 6 large flour tortillas
  • 2 cups shredded cheddar cheese
  • 1 cup enchilada or taco sauce
  • 1 cup diced tomatoes
  • 1/2 cup chopped green onions
  • 1/4 cup sliced black olives
  • 1 packet taco seasoning mix
  • 2 tablespoons oil

Instructions

  1. Preheat oven to 400°F (200°C) and lightly oil a baking sheet.
  2. Brown ground beef in a skillet, drain excess fat, and stir in taco seasoning.
  3. Heat oil in a skillet and crisp each tortilla until golden.
  4. On one tortilla, spread refried beans, then beef, and top with another tortilla. Spread sauce and sprinkle with cheese.
  5. Place pizzas on baking sheet and bake for 8–10 minutes until cheese is melted and bubbly.
  6. Remove from oven and top with diced tomatoes, green onions, and olives.
  7. Slice into wedges and serve warm with sour cream or guacamole if desired.

Notes

  • Crisp tortillas before assembling to prevent sogginess.

  • Let pizzas cool for 2 minutes before slicing.
