- 3/4 cup granulated sugar
- 1/4 cup cornstarch
- 1/4 teaspoon salt
- 2 1/2 cups whole milk
- 4 large egg yolks
- 2 tablespoons unsalted butter
- 2 teaspoons vanilla extract
- 4 medium ripe bananas, sliced
- 1 cup heavy cream
- 2 tablespoons powdered sugar
Instructions
- Ensure the pie crust is fully baked and completely cooled before starting.
- In a medium saucepan, whisk together granulated sugar, cornstarch, and salt.
- Slowly pour in the milk while whisking to keep the mixture smooth.
- Place the saucepan over medium heat and cook, whisking constantly, until thickened.
- In a separate bowl, lightly beat the egg yolks. Gradually whisk in a small amount of the hot mixture to temper the eggs.
- Pour the tempered yolks back into the saucepan and continue cooking for 1 to 2 minutes until glossy and thick.
- Remove from heat and stir in butter and vanilla extract until fully melted and smooth.
- Arrange sliced bananas evenly over the bottom of the pie crust.
- Pour the warm custard over the bananas and smooth the top.
- Cover with plastic wrap pressed directly onto the surface and chill until fully set.
- Whip the heavy cream with powdered sugar until soft peaks form.
- Spread or pipe whipped cream over the chilled pie before serving.
