  • 3/4 cup granulated sugar
  • 1/4 cup cornstarch
  • 1/4 teaspoon salt
  • 2 1/2 cups whole milk
  • 4 large egg yolks
  • 2 tablespoons unsalted butter
  • 2 teaspoons vanilla extract
  • 4 medium ripe bananas, sliced
  • 1 cup heavy cream
  • 2 tablespoons powdered sugar

Instructions

  1. Ensure the pie crust is fully baked and completely cooled before starting.
  2. In a medium saucepan, whisk together granulated sugar, cornstarch, and salt.
  3. Slowly pour in the milk while whisking to keep the mixture smooth.
  4. Place the saucepan over medium heat and cook, whisking constantly, until thickened.
  5. In a separate bowl, lightly beat the egg yolks. Gradually whisk in a small amount of the hot mixture to temper the eggs.
  6. Pour the tempered yolks back into the saucepan and continue cooking for 1 to 2 minutes until glossy and thick.
  7. Remove from heat and stir in butter and vanilla extract until fully melted and smooth.
  8. Arrange sliced bananas evenly over the bottom of the pie crust.
  9. Pour the warm custard over the bananas and smooth the top.
  10. Cover with plastic wrap pressed directly onto the surface and chill until fully set.
  11. Whip the heavy cream with powdered sugar until soft peaks form.
  12. Spread or pipe whipped cream over the chilled pie before serving.
