- 4 medium sweet potatoes, washed and dried
- 3 tablespoons olive oil
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/2 teaspoon garlic powder
Instructions
- Preheat the oven to 400 degrees Fahrenheit and lightly grease a baking dish or sheet.
- Place each sweet potato on a cutting board and slice thinly across the top, stopping just before cutting all the way through.
- Arrange the sliced sweet potatoes in the prepared baking dish.
- Brush generously with olive oil, making sure the oil seeps between the slices.
- Sprinkle evenly with salt, black pepper, and garlic powder.
- Roast for 45 to 60 minutes, brushing with additional oil halfway through, until the potatoes are tender and the edges are lightly crisp.
- Remove from the oven and let rest for 5 minutes before serving.
- Serve warm and enjoy.
Notes
- Use chopsticks on either side of the potato while slicing to avoid cutting all the way through.
