  • 4 boneless, skinless chicken breasts, butterflied
  • 1 cup fresh spinach, lightly sautéed
  • 1 cup shredded mozzarella cheese
  • 2 ounces cream cheese, softened
  • 2 ripe peaches, peeled and chopped
  • 1/2 cup ketchup
  • 2 tablespoons apple cider vinegar
  • 2 tablespoons brown sugar
  • 1 teaspoon garlic powder
  • Salt and black pepper to taste
  • 1 tablespoon olive oil

Instructions

  1. Preheat the grill or grill pan to medium heat and lightly oil the grates.
  2. In a bowl, mix spinach, mozzarella, cream cheese, salt, and pepper to create the stuffing.
  3. Butterfly each chicken breast and season lightly with salt and pepper.
  4. Fill each chicken breast with the cheese and spinach mixture, then fold closed and secure with toothpicks.
  5. Grill the chicken for 6–7 minutes per side until golden and cooked through (165°F internal temperature).
  6. In a saucepan, combine peaches, ketchup, apple cider vinegar, brown sugar, garlic powder, salt, and pepper. Simmer for 10 minutes until thickened into a sauce.
  7. Brush the peach BBQ sauce on the chicken during the last 2–3 minutes of grilling to caramelize.
  8. Remove from heat, rest for a few minutes, slice, and drizzle with more peach sauce before serving.
