- 4 boneless, skinless chicken breasts, butterflied
- 1 cup fresh spinach, lightly sautéed
- 1 cup shredded mozzarella cheese
- 2 ounces cream cheese, softened
- 2 ripe peaches, peeled and chopped
- 1/2 cup ketchup
- 2 tablespoons apple cider vinegar
- 2 tablespoons brown sugar
- 1 teaspoon garlic powder
- Salt and black pepper to taste
- 1 tablespoon olive oil
Instructions
- Preheat the grill or grill pan to medium heat and lightly oil the grates.
- In a bowl, mix spinach, mozzarella, cream cheese, salt, and pepper to create the stuffing.
- Butterfly each chicken breast and season lightly with salt and pepper.
- Fill each chicken breast with the cheese and spinach mixture, then fold closed and secure with toothpicks.
- Grill the chicken for 6–7 minutes per side until golden and cooked through (165°F internal temperature).
- In a saucepan, combine peaches, ketchup, apple cider vinegar, brown sugar, garlic powder, salt, and pepper. Simmer for 10 minutes until thickened into a sauce.
- Brush the peach BBQ sauce on the chicken during the last 2–3 minutes of grilling to caramelize.
- Remove from heat, rest for a few minutes, slice, and drizzle with more peach sauce before serving.
