Description

A vibrant Grilled Peach Salad with caramelized peaches, fresh greens, creamy goat cheese, and toasted pecans, finished with a light balsamic dressing.


Ingredients

  • 3 large fresh peaches, halved and pitted
  • 5 cups mixed salad greens
  • 1/2 cup goat cheese, crumbled
  • 1/4 cup red onion, thinly sliced
  • 1/3 cup toasted pecans
  • 2 tablespoons olive oil
  • 1 tablespoon balsamic vinegar
  • 1 teaspoon honey
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper

Instructions

  1. Heat grill or grill pan over medium heat.
  2. Whisk together olive oil, balsamic vinegar, honey, salt, and black pepper in a small bowl.
  3. Brush peach halves lightly with olive oil.
  4. Grill peaches cut side down for 2 to 3 minutes, flip and grill another 2 minutes until marked and slightly softened.
  5. Let peaches cool slightly, then slice.
  6. In a large bowl combine greens, red onion, toasted pecans, and sliced peaches. Drizzle with dressing and toss gently.
  7. Top with crumbled goat cheese and serve immediately.

Notes

  • Use ripe but firm peaches.
  • Add dressing just before serving.
  • Grill peaches briefly to avoid mushiness.
  • Substitute feta for goat cheese if desired.
