- 3 large fresh peaches, halved and pitted
- 5 cups mixed salad greens
- 1/2 cup goat cheese, crumbled
- 1/4 cup red onion, thinly sliced
- 1/3 cup toasted pecans
- 2 tablespoons olive oil
- 1 tablespoon balsamic vinegar
- 1 teaspoon honey
- 1/4 teaspoon salt
- 1/4 teaspoon black pepper
Instructions
- Heat grill or grill pan over medium heat.
- Whisk together olive oil, balsamic vinegar, honey, salt, and black pepper in a small bowl.
- Brush peach halves lightly with olive oil.
- Grill peaches cut side down for 2 to 3 minutes, flip and grill another 2 minutes until marked and slightly softened.
- Let peaches cool slightly, then slice.
- In a large bowl combine greens, red onion, toasted pecans, and sliced peaches. Drizzle with dressing and toss gently.
- Top with crumbled goat cheese and serve immediately.
Notes
- Use ripe but firm peaches.
- Add dressing just before serving.
- Grill peaches briefly to avoid mushiness.
- Substitute feta for goat cheese if desired.
