  • 4 ears fresh corn, grilled and kernels cut off the cob
  • 1 cup cherry tomatoes, halved
  • 1/2 small red onion, finely diced
  • 1/4 cup fresh cilantro, chopped
  • 2 tablespoons lime juice
  • 1/2 cup Cotija cheese, crumbled

Instructions

  1. Preheat Your Equipment: Heat your grill or grill pan to medium-high until hot.
  2. Combine Ingredients: Mix olive oil, garlic powder, paprika, salt, and pepper. Rub this mixture over the chicken thighs.
