Ingredients
Scale
- 2 pounds chicken thighs, skin-on and bone-in
- 1/2 cup hot honey
- 1 teaspoon garlic powder
- 1 teaspoon paprika
- 2 tablespoons olive oil
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 4 ears fresh corn, grilled and kernels cut off the cob
- 1 cup cherry tomatoes, halved
- 1/2 small red onion, finely diced
- 1/4 cup fresh cilantro, chopped
- 2 tablespoons lime juice
- 1/2 cup Cotija cheese, crumbled
Instructions
- Preheat Your Equipment: Heat your grill or grill pan to medium-high until hot.
- Combine Ingredients: Mix olive oil, garlic powder, paprika, salt, and pepper. Rub this mixture over the chicken thighs.
- Prepare Your Cooking Vessel: Place corn on the grill until charred on all sides, about 8–10 minutes. Remove and set aside.
- Assemble the Dish: Grill chicken thighs skin-side down, cooking for 6–7 minutes per side until golden and cooked through.
- Cook to Perfection: In the last 3 minutes of grilling, brush the chicken generously with hot honey.
- Finishing Touches: Cut grilled corn off the cob, toss with cherry tomatoes, red onion, cilantro, lime juice, and Cotija cheese to make the salad.
- Serve and Enjoy: Plate the hot honey chicken alongside the fresh corn salad and drizzle with extra hot honey if desired.
Notes
- Marinate the chicken for at least 30 minutes for deeper flavor.
- Brush the hot honey glaze near the end to prevent burning.
- Let chicken rest for 5 minutes before slicing to lock in juices.
- Use fresh lime juice instead of bottled for the best flavor in the salad.
