- 2 to 2.5 pounds beef tenderloin, trimmed and tied
- 2 tablespoons olive oil
- 1 tablespoon kosher salt
- 2 teaspoons freshly cracked black pepper
- 1 teaspoon garlic powder
- 1 tablespoon fresh rosemary, finely chopped
- 2 tablespoons butter, melted
- Optional: extra rosemary sprigs and flaky sea salt for garnish
Instructions
- Preheat grill to high heat on one side and medium heat on the other side.
- Rub the tenderloin with olive oil and season with salt, pepper, garlic powder, and rosemary. Let sit at room temperature for 30 minutes.
- Clean and oil the grill grates. Place a drip pan under the cooler side if using charcoal.
- Sear the tenderloin over high heat for 2–3 minutes on each side until a crust forms.
- Move to the cooler side of the grill. Cover and cook until internal temp reaches 130°F for medium-rare, about 20–25 minutes.
- Remove from grill and rest for 10 minutes. Brush with melted butter.
- Slice into thick medallions and serve garnished with rosemary and sea salt.
