- 1 pound fresh green beans, trimmed
- 1 pound beef stew meat, cut into bite sized cubes
- 2 tablespoons olive oil
- 1 medium yellow onion, finely chopped
- 3 cloves garlic, minced
- 2 cups crushed tomatoes
- 1 tablespoon tomato paste
- 1 teaspoon salt, or to taste
- 1 teaspoon black pepper
- 1 teaspoon ground cumin
- 1 cup water
- 2 tablespoons fresh parsley, chopped
Instructions
- Heat a large heavy pot over medium heat.
- In a bowl, mix crushed tomatoes, tomato paste, cumin, salt, and black pepper until smooth.
- Add olive oil to the pot and brown the beef cubes in batches until seared on all sides. Remove and set aside. In the same pot, sauté the chopped onion until soft, then add garlic and cook briefly.
- Return the beef to the pot. Add trimmed green beans and pour in the tomato mixture. Add water and stir gently to combine.
- Bring to a gentle simmer, partially cover, and cook for about 45 minutes, stirring occasionally, until the beef is tender and the beans are soft but not mushy.
- Taste and adjust seasoning if needed. Sprinkle chopped parsley over the top.
- Serve warm with rice or bread.
