- 4 medium ripe tomatoes, cut into large wedges
- 1 large cucumber, cut into thick chunks
- 1/2 medium red onion, thinly sliced
- 1 green bell pepper, sliced
- 1/2 cup Kalamata olives, pitted
- 6 ounces feta cheese, cut into cubes
- 3 tablespoons extra virgin olive oil
- 1 tablespoon red wine vinegar
- 1 teaspoon dried oregano
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
Instructions
- Wash and prepare all vegetables by cutting tomatoes into large wedges, cucumber into thick chunks, red onion into thin slices, and green bell pepper into slices.
- Place tomatoes, cucumber, red onion, green bell pepper, and Kalamata olives into a large mixing bowl.
- In a small bowl whisk together extra virgin olive oil, red wine vinegar, dried oregano, salt, and black pepper.
- Pour the dressing over the vegetables and gently toss until evenly coated.
- Allow the salad to rest for 10 minutes so the flavors can blend.
- Top with cubed feta cheese just before serving.
- Serve immediately while fresh and crisp.
