Eggplant Steaks
- 2 large eggplants, cut lengthwise into 3/4-inch thick slices
- Salt, for sweating the eggplant
Garlic Herb Oil
- 1/4 cup olive oil
- 4 cloves garlic, minced
- 1 tsp dried oregano
- 1/2 tsp smoked paprika
- 1/4 tsp red pepper flakes (optional)
- 1 tbsp lemon juice
- Salt and black pepper, to taste
To Serve (Optional)
- Fresh parsley, chopped
- Lemon wedges
- Toasted pine nuts or tahini drizzle
Instructions
- Sprinkle both sides of the eggplant slices generously with salt and place on a tray lined with paper towels. Let them sit for 30 minutes to draw out moisture, then pat dry.
- Preheat the oven to 425°F (220°C) and line a baking sheet with parchment paper.
- In a small bowl, mix olive oil, minced garlic, oregano, paprika, red pepper flakes, lemon juice, salt, and pepper.
- Brush both sides of the eggplant slices with the garlic herb oil and place on the prepared baking sheet.
- Roast for 20–25 minutes, flipping halfway, until golden brown and tender.
- Remove from the oven and garnish with fresh parsley, a squeeze of lemon, and any desired toppings.
- Serve hot as a main or side dish with your favorite grain or salad.
Notes
- No need to peel the eggplant—the skin helps hold the steaks together.
