- 2 large boneless, skinless chicken breasts, halved horizontally to make 4 thin cutlets
- Salt and pepper, to taste
- 1/2 cup all-purpose flour
- 2 large eggs, beaten
- 1 cup Italian-style breadcrumbs
- 1/4 cup grated Parmesan cheese (for breading)
- 1/2 cup vegetable or olive oil (for frying)
- 1 1/2 cups marinara sauce
- 1 cup shredded mozzarella cheese
- 1/4 cup grated Parmesan cheese (for topping)
- Fresh basil or parsley, for garnish
Instructions
- Preheat oven to 400°F (200°C).
- Season chicken cutlets with salt and pepper.
- Set up a breading station: place flour in one bowl, beaten eggs in the second, and a mixture of breadcrumbs and 1/4 cup Parmesan in the third.
- Dredge each chicken cutlet in flour, dip in egg, then coat with the breadcrumb mixture, pressing to adhere.
- Heat oil in a large skillet over medium heat. Fry chicken cutlets 3–4 minutes per side until golden and crispy. Drain on paper towels.
- Place fried chicken on a baking sheet. Spoon marinara sauce over each cutlet and top with mozzarella and additional Parmesan cheese.
- Bake for 10–15 minutes, or until cheese is melted and bubbly.
- Garnish with fresh basil or parsley and serve hot over pasta, rice, or with a side salad.
