  • Salt and pepper, to taste
  • 1/2 cup all-purpose flour
  • 2 large eggs, beaten
  • 1 cup Italian-style breadcrumbs
  • 1/4 cup grated Parmesan cheese (for breading)
  • 1/2 cup vegetable or olive oil (for frying)
  • 1 1/2 cups marinara sauce
  • 1 cup shredded mozzarella cheese
  • 1/4 cup grated Parmesan cheese (for topping)
  • Fresh basil or parsley, for garnish

Instructions

  1. Preheat oven to 400°F (200°C).
  2. Season chicken cutlets with salt and pepper.
  3. Set up a breading station: place flour in one bowl, beaten eggs in the second, and a mixture of breadcrumbs and 1/4 cup Parmesan in the third.
  4. Dredge each chicken cutlet in flour, dip in egg, then coat with the breadcrumb mixture, pressing to adhere.
  5. Heat oil in a large skillet over medium heat. Fry chicken cutlets 3–4 minutes per side until golden and crispy. Drain on paper towels.
  6. Place fried chicken on a baking sheet. Spoon marinara sauce over each cutlet and top with mozzarella and additional Parmesan cheese.
  7. Bake for 10–15 minutes, or until cheese is melted and bubbly.
  8. Garnish with fresh basil or parsley and serve hot over pasta, rice, or with a side salad.
