- 1 pound carrots, peeled and sliced diagonally
- 1 tablespoon olive oil
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1 1/2 tablespoons gochujang paste
- 2 tablespoons honey
- 1 tablespoon soy sauce
- 2 teaspoons rice vinegar
- 1 clove garlic, minced
- 1 tablespoon toasted sesame seeds (for garnish)
- Chopped parsley or cilantro (optional, for garnish)
Instructions
- Preheat oven to 425°F (220°C) and line a baking sheet with parchment paper.
- In a bowl, toss carrots with olive oil, salt, and pepper until evenly coated.
- Spread carrots on the baking sheet in a single layer and roast for 15 minutes.
- While carrots roast, mix gochujang, honey, soy sauce, rice vinegar, and garlic in a small bowl to create the glaze.
- Remove carrots from oven, pour glaze over them, and toss to coat.
- Return to oven and roast for another 10 minutes until tender and caramelized.
- Sprinkle with sesame seeds and optional herbs before serving.
Notes
- For milder heat, reduce gochujang to 1 tablespoon.
- Use maple syrup instead of honey for a vegan version.
- Don’t overcrowd the pan to ensure proper roasting.
