- 3/4 cup granulated sugar, divided
- 1 tablespoon lemon juice
- 2 tablespoons cornstarch
- 1 cup gluten-free all-purpose flour
- 1 teaspoon baking powder
- 1/4 teaspoon salt
- 1/2 cup unsalted butter, melted
- 3/4 cup milk
Instructions
- Preheat the oven to 350°F (175°C).
- In a large bowl, toss the sliced peaches with 1/2 cup of the granulated sugar, lemon juice, and cornstarch until evenly coated.
- Pour the peach mixture into a greased 9 x 13 inch baking dish and spread evenly.
- In another bowl, combine the gluten-free all-purpose flour, remaining 1/4 cup sugar, baking powder, and salt.
- Stir in the melted butter and milk until just combined to form a smooth batter.
- Spoon the batter evenly over the peaches, leaving some areas uncovered for a rustic look.
- Bake for 40 to 45 minutes until the topping is golden brown and the peach filling is bubbling.
- Remove from the oven and let cool for at least 10 minutes before serving to allow the filling to thicken.
Notes
- Use ripe but firm peaches for the best texture and flavor.
- If using frozen peaches, thaw and drain excess liquid before baking.
