Description

Ingredients

  • 1 medium head Red Cabbage, thinly sliced
  • 2 medium Apples, peeled and grated
  • 1 large Yellow Onion, finely chopped
  • 2 tablespoons Butter
  • 1/4 cup Red Wine Vinegar
  • 2 tablespoons Brown Sugar
  • 1 teaspoon Salt
  • 1/2 teaspoon Black Pepper
  • 1 whole Bay Leaf
  • 1/8 teaspoon Ground Cloves
  • 1/2 cup Water or Apple Juice

Instructions

  1. Place a heavy-bottomed pot or Dutch oven over medium heat.
  2. Add butter to the pot, then stir in chopped onion and cook until translucent. Add grated apples and stir for a few minutes.
  3. Add the sliced red cabbage to the pot. Mix gently to combine evenly.
  4. Pour in vinegar, sugar, water or apple juice, and season with salt, pepper, bay leaf, and ground cloves. Stir thoroughly.
  5. Cover the pot, reduce heat to low, and simmer for 45 minutes to 1 hour, stirring occasionally.
  6. Taste and adjust seasoning, removing the bay leaf before serving.
  7. Serve warm as a side dish.

Notes

  • Letting the cabbage rest overnight deepens the flavor.
  • Add a splash of apple juice when reheating to prevent dryness.
  • Use gloves when slicing cabbage to avoid stained hands.
