For the Potatoes

  • 2 lbs baby potatoes, halved (or quartered if large)
  • 3 tbsp olive oil
  • 4 cloves garlic, minced
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1 tsp Italian seasoning
  • 1/2 cup grated Parmesan cheese
  • 2 tbsp chopped fresh parsley (for garnish)

Instructions

  1. Preheat oven to 425°F (220°C). Line a baking sheet with parchment paper or lightly grease it.
  2. In a large bowl, toss the halved potatoes with olive oil, garlic, salt, pepper, Italian seasoning, and half of the Parmesan cheese.
  3. Spread the potatoes in a single layer on the prepared baking sheet, cut-side down for maximum crispiness.
  4. Roast for 25–30 minutes or until golden and crispy, flipping once halfway through.
  5. Remove from oven and sprinkle with the remaining Parmesan cheese while hot.
  6. Garnish with chopped parsley and serve warm.

Notes

  • Try using Yukon gold or red potatoes for the best texture and flavor.
  • Add a pinch of smoked paprika or crushed red pepper flakes for a spicier kick.
