Ingredients

  • 500 grams raw prawns, peeled and deveined
  • 200 grams glass noodles, soaked in warm water until soft
  • 4 tablespoons unsalted butter
  • 4 cloves garlic, finely minced
  • 2 tablespoons fresh parsley, finely chopped
  • 1 small red chili, thinly sliced
  • 1 tablespoon fresh lemon juice
  • 1 teaspoon salt, or to taste
  • 1 teaspoon freshly ground black pepper

Instructions

  1. Place a large skillet over medium heat and allow it to warm gently.
  2. Soak the glass noodles in warm water for about 10 minutes, then drain well.
  3. Add butter to the skillet and let it melt slowly. Stir in the minced garlic and cook for about 1 minute until fragrant.
  4. Add the prawns in a single layer. Season with salt and black pepper.
  5. Cook the prawns for 2 to 3 minutes per side until pink and opaque. Add the drained noodles to the pan and toss gently so they coat in the garlic butter. Cook for another 2 to 3 minutes.
  6. Stir in lemon juice, chopped parsley, and sliced chili. Toss lightly to combine.
  7. Transfer to a serving bowl and serve immediately while warm and glossy.

Notes

  • Do not overcrowd the pan, cook prawns in batches if necessary.
  • Cook garlic gently to prevent bitterness.
  • Reheat leftovers gently with a splash of water to loosen the noodles.
