  • 1 cup fresh spinach, finely chopped
  • 1 cup cottage cheese
  • 1 1/2 cups self-rising flour
  • 1 large egg
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 teaspoon baking powder (if using all-purpose flour)
  • Optional toppings: sesame seeds, poppy seeds, or everything bagel seasoning

Instructions

  1. Preheat your oven to 375°F (190°C) and line a baking sheet with parchment paper.
  2. In a large mixing bowl, combine the chopped spinach, cottage cheese, flour, egg, salt, and pepper. If you’re using all-purpose flour, add baking powder.
  3. Mix until a soft dough forms. If the dough is too sticky, add a little more flour.
  4. Divide the dough into 6 equal portions. Roll each portion into a ball, then flatten slightly into a disc shape to form the ‘flagel.’
  5. Place the flagels on the prepared baking sheet. If desired, sprinkle sesame seeds, poppy seeds, or everything bagel seasoning on top.
  6. Bake for 18–22 minutes or until golden brown and firm to the touch.
  7. Allow to cool slightly before serving. Enjoy warm or at room temperature.

Notes

  • For extra flavor, mix minced garlic or onion powder into the dough.
  • You can use frozen spinach—just thaw, drain, and squeeze out excess water before adding.
  • Store in an airtight container for up to 3 days or freeze for up to 1 month.
