Ingredients
- Unsalted butter, 1 cup (226 g), softened
- Granulated sugar, 1 cup (200 g)
- Large eggs, 4 eggs (about 200 g without shells)
- All-purpose flour, 2 cups (240 g)
- Baking powder, 2 teaspoons (8 g)
- Salt, 1/4 teaspoon (1.5 g)
- Milk, 1/2 cup (120 ml)
- Vanilla extract, 2 teaspoons (10 ml)
Instructions
- Preheat the oven to 325°F (165°C) and lightly grease a 9×5 inch loaf pan.
- In a large bowl, cream the butter and sugar together until light and fluffy.
- Add the eggs one at a time, mixing well after each addition.
- In a separate bowl, whisk together the flour, baking powder, and salt.
- Gradually add the dry ingredients to the butter mixture, alternating with the milk.
- Stir in the vanilla extract until just combined.
- Pour the batter into the prepared loaf pan and smooth the top.
- Bake for 60 minutes, or until a toothpick inserted into the center comes out clean.
- Cool in the pan for 10 minutes, then transfer to a rack to cool completely before slicing.
Notes
- Use room temperature ingredients for a smoother batter.
- Do not overmix once the flour is added to keep the crumb tender.
- The cake tastes even better the next day as flavors develop.
