- 2 cups crushed chocolate cookies or biscuits
- 6 tablespoons melted butter
- 2 cups chopped semi sweet chocolate
- 2 and 1/2 cups heavy whipping cream
- 1/4 cup granulated sugar
- 2 teaspoons vanilla extract
- 1 tablespoon gelatin powder
- 3 tablespoons cold water
- 1 pinch salt
Instructions
- Prepare a springform pan by greasing it lightly and lining the bottom with parchment paper.
- Mix crushed cookies with melted butter and press into the bottom of the pan. Chill in the refrigerator.
- Melt the chopped chocolate in a saucepan over low heat until smooth. Set aside to cool.
- Bloom the gelatin by sprinkling it over cold water, then warm gently until dissolved.
- Stir the gelatin into the cooled chocolate along with vanilla extract and a pinch of salt.
- Whip the heavy cream with sugar until soft peaks form.
- Fold the whipped cream gently into the chocolate mixture to form mousse.
- Pour the mousse mixture over the chilled crust and smooth the top.
- Refrigerate for at least 4 hours or until fully set.
- Slice carefully and serve chilled.

- Chill the pan before adding the mousse for cleaner layers.
- Do not overwhip the cream to avoid a grainy texture.
- Use high quality chocolate for the richest flavor.
