Ingredients
Scale
- 2 cups all-purpose flour
- 3/4 cup unsweetened cocoa powder
- 2 cups granulated sugar
- 2 teaspoons baking powder
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 2 large eggs
- 1 cup whole milk
- 1/2 cup vegetable oil
- 2 teaspoons vanilla extract
- 1 cup boiling water
- 1 1/2 cups heavy cream
- 1 cup powdered sugar
- 1 1/2 teaspoons peppermint extract
- 8 ounces dark chocolate
- 2 tablespoons butter
- 1/4 cup crushed peppermint candies
Instructions
- Preheat Your Equipment: Set oven to 350°F (175°C). Grease and line two round cake pans with parchment.
- Combine Ingredients: Whisk flour, cocoa, sugar, baking powder, baking soda, and salt. In another bowl, beat eggs, milk, oil, and vanilla. Slowly mix wet into dry, then stir in boiling water until smooth.
- Prepare Your Cooking Vessel: Pour batter evenly into pans. Tap lightly to release air bubbles.
- Assemble the Dish: Bake for 30–35 minutes, until a toothpick comes out clean. Cool completely. Whip cream with powdered sugar and peppermint extract until fluffy. Spread over one cake layer, then top with the second.
- Cook to Perfection: Heat heavy cream until steaming, pour over chopped chocolate, let sit, then whisk until glossy. Stir in butter.
- Finishing Touches: Pour ganache over the cake, letting it drip naturally. Sprinkle crushed peppermint candies on top.
- Serve and Enjoy: Chill briefly to set, slice, and serve.
Notes
- Chill the cream layer before adding ganache for neat layers.
- Use high-quality chocolate for the best ganache.
- Do not overbake the cake to keep it moist.
