- 2 pounds fresh strawberries, hulled and halved
- 2 cups granulated sugar
- 2 tablespoons lemon juice
- 4 ounces dark chocolate (70% cocoa), finely chopped
- 1 tablespoon butter
- Pinch of salt
Instructions
- Sterilize jars and lids by boiling them for 10 minutes, then let them dry.
- In a large saucepan, mix strawberries, sugar, and lemon juice. Let sit for 10 minutes to draw out juices.
- Place the saucepan over medium heat and bring to a gentle boil, stirring often.
- Simmer for 25–30 minutes, stirring occasionally, until the mixture thickens.
- Remove from heat and stir in chopped dark chocolate, butter, and salt until smooth and glossy.
- Pour hot jam into sterilized jars, leaving ¼ inch of space at the top, and seal tightly.
- Let cool to room temperature before refrigerating or storing.

- Always stir while adding chocolate to avoid scorching.
- For a smoother texture, blend the cooked jam before adding chocolate.
