- 2 pounds ground beef
- 3 large onions, thinly sliced and caramelized
- 8 slices Swiss cheese
- 1 cup breadcrumbs
- 2 large eggs
- 1 packet French onion soup mix
- 1 cup beef broth
- 2 cloves garlic, minced
- Salt and pepper to taste
- 1 teaspoon fresh thyme
Instructions
- Set your Crockpot to low heat and warm up a skillet for the onions.
- In the skillet, caramelize the onions until golden brown and fragrant, about 20 minutes.
- In a large bowl, mix ground beef, breadcrumbs, eggs, French onion soup mix, garlic, salt, and pepper until well combined.
- Line the bottom of the Crockpot with parchment paper or lightly grease it.
- Form the beef mixture into a loaf and place it in the Crockpot, then pour beef broth around the loaf.
- Cover and cook on low for 6-7 hours until fully cooked through.
- During the last 10 minutes, top the loaf with caramelized onions and Swiss cheese, allowing the cheese to melt.
- Let rest for 10 minutes before slicing and serving with fresh thyme.
