  • 2 pounds ground beef
  • 3 large onions, thinly sliced and caramelized
  • 8 slices Swiss cheese
  • 1 cup breadcrumbs
  • 2 large eggs
  • 1 packet French onion soup mix
  • 1 cup beef broth
  • 2 cloves garlic, minced
  • Salt and pepper to taste
  • 1 teaspoon fresh thyme

Instructions

  1. Set your Crockpot to low heat and warm up a skillet for the onions.
  2. In the skillet, caramelize the onions until golden brown and fragrant, about 20 minutes.
  3. In a large bowl, mix ground beef, breadcrumbs, eggs, French onion soup mix, garlic, salt, and pepper until well combined.
  4. Line the bottom of the Crockpot with parchment paper or lightly grease it.
  5. Form the beef mixture into a loaf and place it in the Crockpot, then pour beef broth around the loaf.
  6. Cover and cook on low for 6-7 hours until fully cooked through.
  7. During the last 10 minutes, top the loaf with caramelized onions and Swiss cheese, allowing the cheese to melt.
  8. Let rest for 10 minutes before slicing and serving with fresh thyme.
