- 1 lb Italian sausage (mild or hot), browned and drained
- 4 cups chicken broth
- 1 cup heavy cream
- 1 package (16 oz) potato gnocchi
- 2 cups fresh spinach, chopped
- 2 medium carrots, diced
- 2 celery stalks, diced
- 1 small onion, diced
- 3 cloves garlic, minced
- 1 tsp Italian seasoning
- 1/2 tsp crushed red pepper flakes (optional)
- Salt and black pepper, to taste
- Freshly grated Parmesan cheese, for serving
Instructions
- In a skillet, brown the Italian sausage over medium heat until fully cooked. Drain excess grease.
- Add sausage, chicken broth, carrots, celery, onion, garlic, Italian seasoning, red pepper flakes, salt, and pepper to the crock pot. Stir to combine.
- Cover and cook on low for 5–6 hours or on high for 3–4 hours, until vegetables are tender.
- Stir in the heavy cream, gnocchi, and spinach. Cover and cook on high for an additional 20–30 minutes, until gnocchi are cooked and tender.
- Ladle into bowls and top with freshly grated Parmesan before serving.
Notes
- You can substitute chicken or turkey sausage for a lighter version.
- For extra richness, add a splash of white wine when sautéing the sausage.
- Use shelf-stable or refrigerated gnocchi, but add it near the end to avoid mushiness.
