- 4 chicken thighs and 4 drumsticks, bone-in and skin-on
- 2 cups buttermilk
- 2 cups all-purpose flour
- 1/4 cup cornstarch
- 1 tablespoon salt
- 1 teaspoon black pepper
- 1 teaspoon paprika
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1/2 teaspoon cayenne pepper (optional)
- 4 cups vegetable oil for frying
Instructions
- Marinate chicken in buttermilk for at least 30 minutes.
- In a bowl, mix flour, cornstarch, salt, pepper, paprika, garlic powder, onion powder, and cayenne.
- Heat oil in a deep skillet or Dutch oven to 350°F (175°C).
- Dredge chicken in flour mixture, coating thoroughly.
- Fry chicken in batches for 12–15 minutes per batch until golden and internal temperature reaches 165°F.
- Drain on a cooling rack and keep warm in a 200°F oven if necessary.
- Serve immediately with desired sides.
Notes
- Pat chicken dry for extra crispy coating.
- Do not overcrowd the pan to maintain oil temperature.
- Marinate longer for juicier chicken.
