- 1 pound crab meat (fresh or canned)
- 1 cup breadcrumbs
- 2 large eggs, beaten
- 1/4 cup mayonnaise
- 1 tablespoon Dijon mustard
- 2 green onions, finely chopped
- 1 teaspoon garlic powder
- 1 teaspoon paprika
- 1/2 teaspoon salt
- 1/2 teaspoon black pepper
- 1 tablespoon lemon juice
- Vegetable oil, for frying
Instructions
- Preheat about 2 inches of vegetable oil in a deep frying pan or fryer to 350°F (175°C).
- In a large mixing bowl, combine crab meat, breadcrumbs, eggs, mayonnaise, Dijon mustard, green onions, garlic powder, paprika, salt, pepper, and lemon juice until just mixed.
- Line a tray with paper towels for draining.
- Shape the mixture into small balls or patties, about 1 tablespoon each.
- Fry in batches for 2–3 minutes per side until golden brown and crispy.
- Remove with a slotted spoon and drain on paper towels.
- Serve hot with lemon wedges or dipping sauce of choice.
Notes
- Chill the shaped bites for 15 minutes before frying to help them hold their shape.
- Do not overcrowd the pan while frying to keep oil temperature stable.
- For a lighter version, bake at 400°F (200°C) for 12–15 minutes instead of frying.
