Description

A classic Southern comfort dish featuring tender cube steak coated in a crispy buttermilk crust, smothered with rich and creamy country gravy. Perfect for cozy family dinners or weekend brunches.

Ingredients

Scale
  • 4 cube steaks (about 46 oz each)
  • 2 cups buttermilk
  • 2 cups all-purpose flour
  • 2 large eggs
  • 1 teaspoon paprika
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 ½ teaspoons salt
  • 1 teaspoon black pepper
  • 1 cup vegetable oil (for frying)
  • 3 tablespoons butter
  • 3 cups milk
  • 3 tablespoons flour (for gravy)
  • Additional salt & pepper to taste

Instructions

  1. Preheat Your Equipment: Heat a cast-iron skillet with about an inch of oil to 350°F.
  2. Combine Ingredients: Mix flour, paprika, garlic powder, onion powder, salt, and pepper in one bowl. Whisk eggs and buttermilk in another.
  3. Prepare Your Cooking Vessel: Line a plate with paper towels and set up a wire rack for draining.
  4. Assemble the Dish: Dredge steaks in seasoned flour, dip in buttermilk mixture, then dredge again in flour. Let rest 10 minutes.
  5. Cook to Perfection: Fry steaks in batches, 3–4 minutes per side, until golden and crispy. Drain on rack.
  6. Finishing Touches: For gravy, keep 3 tablespoons of oil in skillet, add butter, whisk in flour, cook golden, then gradually whisk in milk until thickened. Season with salt and pepper.
  7. Serve and Enjoy: Smother steaks with country gravy and serve immediately.

Notes

  • Let the breaded steaks rest before frying to help coating stick.
  • For a lighter version, bake on a rack at 425°F instead of frying.
  • Add cayenne pepper to the flour for a spicy twist.
  • Gravy can be made ahead and reheated with a splash of milk.
