Description

A creamy fusion pasta inspired by Southeast Asian laksa, loaded with shrimp, mussels, and calamari in a rich coconut laksa sauce with bright lime and fresh herbs.


Ingredients

  • 12 ounces spaghetti
  • 8 ounces shrimp, peeled and deveined
  • 8 ounces mussels, cleaned and debearded
  • 6 ounces calamari rings
  • 1 can (13.5 ounces) coconut milk
  • 2 tablespoons laksa paste
  • 3 cloves garlic, minced
  • 1 tablespoon fresh ginger, grated
  • 1 small red chili, thinly sliced
  • 1 tablespoon fish sauce
  • 2 tablespoons fresh lime juice
  • 1 tablespoon vegetable oil
  • 2 tablespoons fresh cilantro, chopped
  • 1 teaspoon salt, or to taste
  • 1 teaspoon black pepper, freshly ground

Instructions

  1. Bring a large pot of salted water to a boil and cook the spaghetti until al dente according to package instructions. Reserve a small amount of pasta water, then drain.
  2. Lightly season the shrimp, mussels, and calamari with salt and black pepper.
  3. Heat vegetable oil in a deep skillet over medium heat. Add garlic, ginger, and red chili, sautéing until fragrant.
  4. Stir in the laksa paste and cook for 1 minute to release its aroma.
  5. Pour in the coconut milk and fish sauce. Simmer gently for 5 minutes.
  6. Add the shrimp, mussels, and calamari to the sauce. Cook for 4 to 6 minutes, or until the seafood is just opaque and cooked through.
  7. Add the cooked spaghetti directly into the sauce, tossing well to coat. Add a splash of reserved pasta water if needed to loosen the sauce.
  8. Stir in fresh lime juice and chopped cilantro. Adjust seasoning if needed and serve immediately.

Notes

  • Do not overcook the seafood to keep it tender.
  • Adjust the spice level by increasing or decreasing the red chili and laksa paste.
  • Add a splash of coconut milk when reheating to restore creaminess.
