A creamy fusion pasta inspired by Southeast Asian laksa, loaded with shrimp, mussels, and calamari in a rich coconut laksa sauce with bright lime and fresh herbs.

- 12 ounces spaghetti
- 8 ounces shrimp, peeled and deveined
- 8 ounces mussels, cleaned and debearded
- 6 ounces calamari rings
- 1 can (13.5 ounces) coconut milk
- 2 tablespoons laksa paste
- 3 cloves garlic, minced
- 1 tablespoon fresh ginger, grated
- 1 small red chili, thinly sliced
- 1 tablespoon fish sauce
- 2 tablespoons fresh lime juice
- 1 tablespoon vegetable oil
- 2 tablespoons fresh cilantro, chopped
- 1 teaspoon salt, or to taste
- 1 teaspoon black pepper, freshly ground
Instructions
- Bring a large pot of salted water to a boil and cook the spaghetti until al dente according to package instructions. Reserve a small amount of pasta water, then drain.
- Lightly season the shrimp, mussels, and calamari with salt and black pepper.
- Heat vegetable oil in a deep skillet over medium heat. Add garlic, ginger, and red chili, sautéing until fragrant.
- Stir in the laksa paste and cook for 1 minute to release its aroma.
- Pour in the coconut milk and fish sauce. Simmer gently for 5 minutes.
- Add the shrimp, mussels, and calamari to the sauce. Cook for 4 to 6 minutes, or until the seafood is just opaque and cooked through.
- Add the cooked spaghetti directly into the sauce, tossing well to coat. Add a splash of reserved pasta water if needed to loosen the sauce.
- Stir in fresh lime juice and chopped cilantro. Adjust seasoning if needed and serve immediately.
Notes
- Do not overcook the seafood to keep it tender.
- Adjust the spice level by increasing or decreasing the red chili and laksa paste.
- Add a splash of coconut milk when reheating to restore creaminess.
