Ingredients
- Russet potatoes, 2 pounds, peeled and cubed
- Unsalted butter, 6 tablespoons
- Whole milk, 1 cup
- Sour cream, 1 cup
- Cream cheese, 4 ounces, softened
- Shredded cheddar cheese, 1 1/2 cups
- Salt, 1 1/2 teaspoons
- Black pepper, 1/2 teaspoon
Instructions
- Preheat the oven to 375°F and lightly grease a baking dish.
- Place the cubed potatoes in a large pot, cover with salted water, and boil until fork tender, about 15 minutes.
- Drain the potatoes well and return them to the pot to release excess steam.
- Mash the potatoes with butter, warm milk, sour cream, cream cheese, salt, and black pepper until smooth.
- Fold in 1 cup of the shredded cheddar cheese.
- Transfer the mashed potatoes to the prepared baking dish and spread evenly.
- Sprinkle the remaining cheddar cheese over the top.
- Bake for 25 to 30 minutes until heated through and lightly golden on top.
- Let rest for a few minutes before serving.
Notes
- Warm the milk and butter slightly for smoother mashed potatoes.
- Do not overmix to keep the texture fluffy.
