Description

A rich and comforting baked mashed potato casserole made with fluffy potatoes, creamy dairy, and melted cheese, baked until lightly golden and irresistibly smooth inside.


Ingredients

  • Russet potatoes, 2 pounds, peeled and cubed
  • Unsalted butter, 6 tablespoons
  • Whole milk, 1 cup
  • Sour cream, 1 cup
  • Cream cheese, 4 ounces, softened
  • Shredded cheddar cheese, 1 1/2 cups
  • Salt, 1 1/2 teaspoons
  • Black pepper, 1/2 teaspoon

Instructions

  1. Preheat the oven to 375°F and lightly grease a baking dish.
  2. Place the cubed potatoes in a large pot, cover with salted water, and boil until fork tender, about 15 minutes.
  3. Drain the potatoes well and return them to the pot to release excess steam.
  4. Mash the potatoes with butter, warm milk, sour cream, cream cheese, salt, and black pepper until smooth.
  5. Fold in 1 cup of the shredded cheddar cheese.
  6. Transfer the mashed potatoes to the prepared baking dish and spread evenly.
  7. Sprinkle the remaining cheddar cheese over the top.
  8. Bake for 25 to 30 minutes until heated through and lightly golden on top.
