Ingredients
Scale
- 2 cups cooked chicken, shredded or chopped
- 1½ cups frozen mixed vegetables
- ⅓ cup unsalted butter
- ⅓ cup all-purpose flour
- 1¾ cups chicken broth
- ½ cup milk
- ½ teaspoon salt
- ¼ teaspoon black pepper
- ½ cup chopped onion
- 2 refrigerated pie crusts
- 1 egg, beaten (for egg wash)
Instructions
- Preheat your oven to 425°F. Place a baking sheet on the lower rack to catch any spills.
- In a large skillet, melt butter over medium heat. Add onions and cook until soft, about 3 minutes. Stir in flour and cook for 1–2 minutes more.
- Slowly whisk in chicken broth and milk until smooth. Cook until thick and bubbling, about 5 minutes.
- Stir in salt, pepper, chicken, and frozen vegetables. Mix well and remove from heat.
- Line a 9-inch pie dish with one crust. Pour the filling into the crust.
- Top with the second crust, sealing the edges and cutting small slits in the top to vent.
- Brush the top with beaten egg for a golden finish.
- Bake for 30–35 minutes until the crust is golden brown and the filling is bubbling.
- Let rest for 10 minutes before slicing and serving.
Notes
- Use rotisserie chicken for a quicker prep.
- Add fresh herbs like thyme or parsley for extra flavor.
- Letting the pie rest helps the filling set properly.
- Freeze unbaked for a make-ahead meal.
