- 2 medium chicken breasts, sliced thinly
- 12 oz fettuccine or penne pasta
- 8 oz cremini or button mushrooms, sliced
- 3 cloves garlic, minced
- 1 small onion, finely chopped
- 1 cup heavy cream
- 1 cup chicken broth
- 1/2 cup freshly grated Parmesan cheese
- 2 tablespoons olive oil
- 1 tablespoon butter
- Salt and pepper to taste
- 2 tablespoons fresh parsley, chopped
Instructions
- Bring a large pot of salted water to a boil and cook pasta until al dente. Reserve 1 cup of pasta water and drain.
- Heat olive oil in a skillet over medium heat. Sear chicken slices until golden, then remove and set aside.
- Add butter to the same pan. Sauté onions and garlic until fragrant, then add mushrooms and cook until browned.
- Pour in chicken broth and simmer for 2 minutes, scraping up brown bits. Add heavy cream and stir well.
- Lower heat and stir in Parmesan cheese until smooth and slightly thickened. Return chicken to the pan.
- Add cooked pasta and toss to coat, adding reserved pasta water gradually until creamy.
- Season with salt and pepper. Garnish with chopped parsley and serve hot.
Notes
- Use freshly grated Parmesan for the smoothest sauce.
- Don’t overcook the chicken to keep it tender.
- Add a squeeze of lemon for brightness if desired.
- Reheat leftovers gently with a splash of milk or broth.
