Description

A rich and velvety creamed spinach made with fresh spinach, garlic, cream, and parmesan, gently simmered into a smooth and comforting side dish that pairs beautifully with almost any main course.


Ingredients

  • 1 pound fresh spinach, washed and roughly chopped
  • 2 tablespoons unsalted butter
  • 3 cloves garlic, minced
  • 1 cup heavy cream
  • 4 ounces cream cheese, softened
  • 1/4 cup grated Parmesan cheese
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/8 teaspoon ground nutmeg

Instructions

  1. Place a large skillet over medium heat and allow it to warm gently.
  2. In a bowl, have the heavy cream, softened cream cheese, and grated Parmesan ready.
  3. Melt the butter in the skillet, then add the minced garlic and sauté for about 30 seconds until fragrant.
  4. Add the spinach in batches, stirring until wilted. Drain excess liquid if needed and return the spinach to the pan.
  5. Lower the heat and stir in the heavy cream and cream cheese until smooth. Add Parmesan, salt, black pepper, and nutmeg. Simmer gently for 5 to 7 minutes until thickened.
  6. Taste and adjust seasoning if necessary.
  7. Serve warm and enjoy.

Notes

  • Drain spinach thoroughly to avoid a watery sauce.
  • Do not boil the cream to prevent separation.
  • Add a splash of cream while reheating if the mixture thickens too much.
