- 1 pound fresh spinach, washed and roughly chopped
- 2 tablespoons unsalted butter
- 3 cloves garlic, minced
- 1 cup heavy cream
- 4 ounces cream cheese, softened
- 1/4 cup grated Parmesan cheese
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/8 teaspoon ground nutmeg
Instructions
- Place a large skillet over medium heat and allow it to warm gently.
- In a bowl, have the heavy cream, softened cream cheese, and grated Parmesan ready.
- Melt the butter in the skillet, then add the minced garlic and sauté for about 30 seconds until fragrant.
- Add the spinach in batches, stirring until wilted. Drain excess liquid if needed and return the spinach to the pan.
- Lower the heat and stir in the heavy cream and cream cheese until smooth. Add Parmesan, salt, black pepper, and nutmeg. Simmer gently for 5 to 7 minutes until thickened.
- Taste and adjust seasoning if necessary.
- Serve warm and enjoy.
Notes
- Drain spinach thoroughly to avoid a watery sauce.
- Do not boil the cream to prevent separation.
- Add a splash of cream while reheating if the mixture thickens too much.
