Description

These no-bake cranberry pistachio oatmeal energy bites are the perfect on-the-go snack. They’re chewy, nutty, sweet, and packed with wholesome ingredients like oats, cranberries, and pistachios.


Ingredients

  • 1 1/2 cups rolled oats
  • 1/2 cup dried cranberries
  • 1/3 cup shelled pistachios, chopped
  • 1/2 cup nut butter (peanut or almond)
  • 1/3 cup honey or maple syrup
  • 1 teaspoon vanilla extract
  • 1 tablespoon chia seeds (optional)
  • Pinch of salt

Instructions

  1. Prepare a tray lined with parchment paper and set aside.
  2. In a large bowl, mix oats, cranberries, chopped pistachios, chia seeds (if using), and salt.
  3. Add nut butter, honey or maple syrup, and vanilla extract to the bowl and stir until well combined.
  4. If the mixture feels too dry, add a small splash of milk or extra nut butter.
  5. Use damp hands to roll the mixture into 1-inch balls.
  6. Place the balls on the prepared tray and refrigerate for at least 30 minutes to firm up.
  7. Enjoy immediately or store in an airtight container for later.
