- 1 tablespoon baking powder

- 3/4 cup fresh orange juice
- Zest from 1 large orange
- 1/4 cup milk
- 1/3 cup vegetable oil
- 1 large egg
- 1 1/2 cups fresh or frozen cranberries
- 1 teaspoon vanilla extract
Instructions
- Preheat your oven to 350°F (175°C). Grease or line a 9×5-inch loaf pan with parchment paper.
- In a large bowl, whisk together flour, sugar, baking powder, and salt.
- In another bowl, mix orange juice, orange zest, milk, oil, egg, and vanilla until smooth.
- Pour the wet ingredients into the dry ingredients and stir gently until just combined.
- Toss cranberries with a small amount of flour to coat, then fold into the batter.
- Pour the batter into the prepared loaf pan and smooth the top.
- Bake for 50–55 minutes, or until a toothpick inserted in the center comes out clean.
- Let the bread cool in the pan for 10 minutes, then transfer to a wire rack to cool completely before slicing.
