Description

Ingredients

  • 1 can (15 oz) black beans, drained and rinsed
  • 1 can (15 oz) black-eyed peas, drained and rinsed
  • 1 1/2 cups corn kernels (or 1 can, drained)
  • 2 Roma tomatoes, diced
  • 1 red bell pepper, diced
  • 1 orange bell pepper, diced
  • 1/2 red onion, finely chopped
  • 1 jalapeño, finely diced (optional)
  • 1/4 cup fresh cilantro, chopped
  • 1 avocado, diced
  • 1/4 cup olive oil
  • 3 tablespoons lime juice
  • 2 tablespoons red wine vinegar
  • 1 tablespoon honey
  • 1/2 teaspoon garlic powder
  • Salt and black pepper to taste

Instructions

  1. In a large bowl, combine black beans, black-eyed peas, corn, tomatoes, bell peppers, red onion, jalapeño, and cilantro.
  2. In a small bowl or jar, whisk together olive oil, lime juice, red wine vinegar, honey, garlic powder, salt, and pepper.
  3. Pour the dressing over the salad and toss well to coat evenly.
  4. Refrigerate for at least 30 minutes to allow flavors to develop.
  5. Gently fold in diced avocado just before serving.
  6. Serve chilled with tortilla chips or as a side dish.
