- 1 can (15 oz) black beans, drained and rinsed
- 1 can (15 oz) black-eyed peas, drained and rinsed
- 1 1/2 cups corn kernels (or 1 can, drained)
- 2 Roma tomatoes, diced
- 1 red bell pepper, diced
- 1 orange bell pepper, diced
- 1/2 red onion, finely chopped
- 1 jalapeño, finely diced (optional)
- 1/4 cup fresh cilantro, chopped
- 1 avocado, diced
- 1/4 cup olive oil
- 3 tablespoons lime juice
- 2 tablespoons red wine vinegar
- 1 tablespoon honey
- 1/2 teaspoon garlic powder
- Salt and black pepper to taste
Instructions
- In a large bowl, combine black beans, black-eyed peas, corn, tomatoes, bell peppers, red onion, jalapeño, and cilantro.
- In a small bowl or jar, whisk together olive oil, lime juice, red wine vinegar, honey, garlic powder, salt, and pepper.
- Pour the dressing over the salad and toss well to coat evenly.
- Refrigerate for at least 30 minutes to allow flavors to develop.
- Gently fold in diced avocado just before serving.
- Serve chilled with tortilla chips or as a side dish.
