Description

A creamy, protein-packed pasta sauce made with blended cottage cheese, Parmesan, garlic, and fresh herbs. Light yet indulgent, it’s ready in just 20 minutes and perfect for weeknights.


Ingredients

  • 2 cups (450 g) cottage cheese
  • 2 cloves garlic, minced
  • 2 tablespoons olive oil
  • 1/2 cup Parmesan cheese, freshly grated
  • 1 tablespoon lemon juice
  • 1 teaspoon salt, or to taste
  • 1/2 teaspoon black pepper, freshly ground
  • 1/4 cup fresh basil, chopped
  • 12 oz (340 g) pasta of choice

Instructions

  1. Preheat Your Equipment: Bring a large pot of salted water to boil for the pasta.
  2. Combine Ingredients: In a blender, add cottage cheese, garlic, olive oil, Parmesan, lemon juice, salt, and pepper. Blend until completely smooth.
  3. Prepare Your Cooking Vessel: In a skillet, warm the blended sauce gently over low heat, stirring occasionally. Do not let it boil.
  4. Assemble the Dish: Cook the pasta until al dente, then drain, reserving 1/2 cup of pasta water. Add the pasta to the skillet with the sauce.
  5. Cook to Perfection: Toss the pasta in the sauce, adding reserved pasta water little by little until the sauce clings perfectly.
  6. Finishing Touches: Stir in chopped fresh basil and drizzle with a touch more olive oil.
  7. Serve and Enjoy: Plate it up with extra Parmesan and a few basil leaves for garnish.
