- 2 cups (450 g) cottage cheese
- 2 cloves garlic, minced
- 2 tablespoons olive oil
- 1/2 cup Parmesan cheese, freshly grated
- 1 tablespoon lemon juice
- 1 teaspoon salt, or to taste
- 1/2 teaspoon black pepper, freshly ground
- 1/4 cup fresh basil, chopped
- 12 oz (340 g) pasta of choice
Instructions
- Preheat Your Equipment: Bring a large pot of salted water to boil for the pasta.
- Combine Ingredients: In a blender, add cottage cheese, garlic, olive oil, Parmesan, lemon juice, salt, and pepper. Blend until completely smooth.
- Prepare Your Cooking Vessel: In a skillet, warm the blended sauce gently over low heat, stirring occasionally. Do not let it boil.
- Assemble the Dish: Cook the pasta until al dente, then drain, reserving 1/2 cup of pasta water. Add the pasta to the skillet with the sauce.
- Cook to Perfection: Toss the pasta in the sauce, adding reserved pasta water little by little until the sauce clings perfectly.
- Finishing Touches: Stir in chopped fresh basil and drizzle with a touch more olive oil.
- Serve and Enjoy: Plate it up with extra Parmesan and a few basil leaves for garnish.
